I have the Macan S in similar spec (volcano grey, 21 rs spider, Crest in headrest etc).
I dont have any issues with the 18 way seats... the side bolsters are higher than others but the seats are so comfortable and sporty.
Have u considered privacy glass and PASM? Personal options but think the privacy glass works well with VG. The PASM is good with 21 inch wheels although I am in UK where perhaps road surface has more wear and imperfections than Aus...... the PASM does tighten up the suspension too.

pressing the sport button does this in mine (think now its turning the wheel dial?)
