Neat spec you will end up with a great motor
Literally all I would have changed is to upgrade the seats to give the lumber support and squab length adjustment I need in a Macan to be comfortable.

Agreed. Residuals are not the be all and end all, but I reckon a sensible £60k GTS will depreciate a lot slower than most!
And more importantly, it will be an awesome car that you will enjoy hugely!

What would be the spec that a person in the market for a GTS will be looking for?
Maybe this spec plus Sports Chrono, 18 way seats and PS+, but that would be another £2k or thereabouts to the initial outlay.
So its a good balance as is, possibly residuals may be slightly less percentage wise because of the spec but it will still be a great car as is.
