2019 Macan S.
Coolant temp from cold (9 degrees this morning) reaches 90 degrees in 5 minutes of gentle driving.
Is that normal?
That's far quicker than my 981.
Coolant heat up time?
Feels quick to me. Obviously different but my 992 Struggles to get to full oil temp before I get to work which is around 12 to fifteen minutes.
Don’t remember my Macan S being much if any quicker…

Mine gets to 90° after a couple of miles, but the 2nd mile is on a dual carriageway.

yes for coolant , oil temp a lot slower well in excess of 10 miles probably 15 to 20 mins

If you switch to sport from startup and then drive normally it will take longer to warm up as the flaps will be open. Resist the sport button for a few miles as normal mode will keep them closed and enhance warm up times during cold weather.

Oil Temp - the important one - takes an age to warm up
Depends on roads but at least 15 miles or so before you can give it the beans

I did wonder about the flaps but didn't know if mine had them or what effect they'd have on warm-up time.
I'd been advised ages ago to wait until the oil temp in my 981 was at 80° before using higher revs. I'm aware of the dangers of cold wear, and in 50k miles the 981 hasn't used a drop of oil.
In Soort, in the 981 at least, a second oil cooler opens up which reduces oil temp 5-10°, down from 102°-ish to 92°-ish.
The Macan's oil seems to run cooler in Normal at around 90-95° when fully warmed.
