Planning on getting ceramic coating done at an independent that has been recommended - https://azuricarcare.co.uk/ so that not an option unless anyone thinks I’m wasting extra money and the dealer will do a good job.

Can I assume you're buying from Porsche Hatfield if looking at Azuri? I plan to have a chat with Azuri at some point to get a quote for mine but from seeing their Instagram page it looks like they do a lot of new car prep for Porsche Hatfield. So may be worth speaking with the dealer on this as you could find they'd just be sending it to Azuri anyway.

My new T came with a full tank as did the S which was a used car. Didn’t have to ask. Also both cars were ceramic coated free.
